Day 12- Chicken and rice

What do you do with 1 chicken and a bunch of already cooked brown rice? Fake Arroz con Pollo (Chicken and Rice), of course!

I cut the chicken in to pieces, removed the skin and trimmed the fat. Sprinkle generously with "House Seasoning"* and paprika and brown in 3 teaspoons olive oil. Transfer to baking dish and bake in 350° until internal temperature reaches 160°.

While the chicken was cooking I made the rice and beans. I added diced onion, diced garlic clove, chicken broth, tomato paste, diced canned tomatoes, oregano, paprika, and house seasoning to the pan I browned the chicken in. Bring to a boil and scrape the good bits off the bottom of the pan. When boiling, add cooked rice and lower heat so that rice is simmering. Let simmer until chicken is cooked and rice is warm.

We also had black beans. 2 cups black beans, 1 can diced tomatoes, 1 clove minced garlic, 1 diced onion, 1/2 cup water and cumin, oregano and house seasoning to taste. Mix it all in a sauce pan, bring to a boil and let boil until onion is soft, beans are warm and most of the liquid is evaporated.


*House Seasoning is a Paula Deen recipe that we love.
1 cup salt
1/4 cup pepper
1/4 cup garlic powder

Mix and store in an airtight container. Makes a great all purpose seasoning.
